Directions
Start by cleaning chicken and flatten chicken so the chicken breast is the same thickness. This will help make sure all the chicken cooks evenly and gives it a flat surface so all the good stuff stays on.
Season chicken on both sides with Everglades of choice. We went with the Everglades all purpose. Set back in fridge for it to marinate.
Cook bacon- we used our pellet grill to do this. Turn grill to 350. Start by spraying the grates.
Lay bacon on and sprinkle with Everglades rub after about 10-15 minutes flip pieces over and sprinkle more rub on the pieces. Cook an additional 10-15 minutes.
Watch closely because it cook very quickly and get crispy the last 10 minutes.
Remove the bacon and set aside.
Turn grill temperature up to 375. Place chicken breast on and cook flipping once till chicken is about 150 degrees
Top with mopping sauce on the one side and continue to cook till temperature reaches 160.
On the Moppin Sauce side of chicken top with bacon and a sprinkle of the cheese.
Continue to cook till chicken reaches safe internal temperature of 165.
Remove from grill and serve it up.
