Preheat oven to 375 degrees.
Chop onion, mince shallot and garlic clove. Melt butter in skillet on stove.
When butter is melted add onion, shallot garlic and 2 teaspoons of Everglades Heat.
While onions are browning. Flatten chicken breast to about ¼ inch thickness or until the breast are an even height.
Once onion mixture is browned add the bag of fresh spinach and cook for approximately 3 minutes or until it has wilted. Remove pan from hot stove top.
In mixing bowl combine cream cheese, parmesan cheese, 2 teaspoons of Everglades Heat, and Spinach mixture.
On flattened piece of chicken put some of the cream cheese spinach mixture in the center and spread out to the edges leaving about a ¼ inch space around the edge.
Roll up as best you can and then wrap in bacon. We used two pieces of bacon. To keep it rolled together you might need to use toothpicks
Place on baking sheet and cook in oven for approximately 45 minutes or until chicken is done.
