Salmon Croquettes Printer-friendly Recipe Card
(Makes about 8)
2 cups flaked salmon
4 Tbsp flour
1 egg
2 Tbsp minced onion
1 tsp Everglades Fish & Fowl
1/2 tsp Everglades Seasoning
1 cup bread crumbs
1/2 cup milk
Combine all ingredients and mix well. Fry in hot oil in heavy skillet
until browned on both sides and serve.

Lebanon County Sausage Casserole Printer-friendly

(Makes about 6 servings)
1 lb. pork sausage, loose (can also use Jimmy Dean Hot version)
1 ½ cups raw potatoes, peeled and sliced
1 cup raw onions, sliced
1 cup raw carrots, sliced
½ cup regular rice, uncooked
1 ½ cup canned tomatoes incl. juice
1 ¼ tbsp. Everglades Seasoning
2 tbsp. sugar
Brown sausage in heavy skillet and drain off excess fat. Place sausage in bottom
of 2 quart casserole dish. Cover with layers of potatoes, onions, carrots and
rice. Add tomatoes with juice all over rice. Do not mix. Combine Everglades®
Seasoning
and sugar and sprinkle over top. Bake covered with foil at 350 for 1 ½ hours.
Spoon out and dig to the bottom to get all layers! This is great for family gatherings
or when you need to bring a covered dish.

Everglades Cabbage Printer-friendly

3 Large Heads Green Cabbage
½ Tsp Butter
Original Everglades Seasoning
Aluminum Foil
Cut Cabbage into about 8 pieces. Tear off Foil for 16 pieces. Lay each pieces
on foil. Put ½ tsp butter on each piece and sprinkle liberally with Everglades
Seasoning. Fold foil up tight then place on BBQ grill in pan of water for about
1 hour or until
cabbage is tender. It can also be cooked in the oven at 350 degrees.

Everglades Fish & Fowl
½ cup Celery
½ cup Onion
½ cup Tomato
½ cup Bell Pepper
Bacon strips
Lemon & butter (optional)
Preheat Oven to 350 degrees. Sprinkle Fish & Fowl outside AND inside fish.
Chop celery, onion, tomato and bell pepper and mix together. Place this mixture
inside fish. Wrap fish with bacon and secure with
toothpicks. After baking 5 minutes, turn, pour lemon and butter mixture over
fish and continue to bake another 3 to 5 minutes or until done. Be careful NOT
to overcook!

15 oz. Everglades Moppin' Grillin' Sauce
Sprinkle ribs generously 2 hours before cooking with Cactus Dust BBQ Rub.
Heat the combined ingredients, place ribs on cookie sheet and brush ribs on both
sides with half of the bottle of Moppin' Grillin' Sauce. Bake at 300 degrees,
turning once and brushing with the remaining sauce.

1 Onion, small, chopped fine 2 cups Mayo
Everglades Seasoning to taste Parsley sprigs, olives
Cool and peel hard boiled eggs. Cut eggs in half the long way. Scoopout the yolks.
Mix yolks with tuna and onion. Add mayonnaise, EGS to taste. Fill the white part
of the egg with this mixture, top with a
parsley sprig or olive slice.

4 Medium potatoes Everglades Heat
2 tb Olive or canola oil
Take 4 medium potatoes and wash well. DON'T peel! Cut into about 1 inch
pieces. Put about 2 tb of olive oil or canola oil (low saturated fat corn oil
will do) into a bowl. Put the 'taters in the bowl and
toss until coated with the oil. Sprinkle liberally (this is Kennedy country!)
with the Everglades Heat and toss again. Then spread them out on a cookie sheet
and bake at 450 for about 15 - 20 minutes, stirring occasionally so they brown
evenly and don't stick to the pan. They're yummy! This'll serve 4 people (or
in my house, 3!).

3 cup very thinly sliced zucchini 1 tsp Everglades® Seasoning
1 cup Bisquick ½ tsp Oregano
½ cup Chopped onion 1 Clove garlic, crushed
½ c Parmesan cheese ½ cup vegetable oil
1 tb Parsley 4 Eggs, beaten
Grease 13x9x2 pan. Mix all ingredients, it looks HORRIBLE, then spread in pan.
Bake at 350 degrees about 30 minutes. This freezes well, and cut into squares
it can be eaten warm or cold.
Bobbi's Hamburger Upside Down Casserole Printer-friendly

Makes 4 servings
2 ½ cup Elbow macaroni 3 tb Butter
½ c Minced onion 1 lb Hamburger
1 8 oz can tomato sauce Everglades Seasoning to taste
1 8 oz grated cheese 1/4 ts Oregano
¾ cup Milk 3 eggs, beaten
Cook macaroni in salted water until just tender. Drain. In hot butter, saute
onion. Add beef, cook until brown. Drain. Stir in tomato sauce, salt, pepper,
oregano. Simmer a few minutes, then spread over bottom of greased two quart casserole.
Toss macaroni with grated cheese, and arrange on top of hamburger. Press down.
Combine eggs and milk, and pour
over top. Cook 350 degrees, 1½ hours or until macaroni is golden and custard
is set. Remove from oven, let stand a few minutes. If you have used a bowl type
casserole dish, you can invert the casserole onto a serving dish. This is an
easy dish to make. Sometimes I also put in a can of corn or green beans to make
a complete meal.

Bobbi's Macaroni & Tuna Salad Printer-friendly

1 lg can tuna (drained) 1 tb Grey Poupon
1 Green pepper, chopped 1 tb Kraft's Horseradish sauce
1 small onion, chopped Mayo, Lite or regular
2 stalks celery, chopped Everglades Seasoning
2 Green onion, diced 1 16 oz box of macaroni
3 Hard boiled eggs, chopped 2 carrots, diced
Cook and drain macaroni. Chop green pepper, onions, celery, carrots, green onions.
Place vegetables and chopped eggs in large bowl, drain tuna and flake into bowl.
Add Everglades Seasoning to taste. Add drained and cooled macaroni. Now here
comes the hard part. I don't measure the mayonnaise, I "judge"...what
it needs about three whalloping tablespoons, add mustard and horseradish. Blend
all together and refrigerate. You might need to add more mayonnaise before serving.
This is the recipe that I'm asked to make for the Pot Luck Luncheons at Norweigan
Cruise Lines, where I work, it is always a winner!

Bobbi's Special Chicken Printer-friendly

4 Chicken breasts 1/4 c Melted margarine
1 can Cream of chicken soup Everglades Seasoning
1 cup grated cheddar cheese Parmesan cheese (topping)
1 cup stuffing mix, unprepared
Grease a casserole dish. Place 4 chicken breasts (can be either boneless or with
bone, thawed) in bottom of casserole. Sprinkle cheese over breasts. Truthfully,
any type of cheese could be used, I use cheddar. Cover with undiluted cream of
chicken soup (again, you could probably use any cream soup of choice). Add Everglades
Seasoning to taste. Cover with UNPREPARED Stuffing mix. (I used Stove Top) Pour
melted margarine over this and sprinkle parmesan cheese over entire
casserole. Bake at 350 degrees 40-45 minutes. Serve with noodles or rice.
Georgia's Hamburger Casserole Printer-friendly

2 tb cooking Oil 1 cup Tomato sauce
1 ½ cup Macaroni 1 lb Ground beef
2/3 cup Water 1 Green pepper, chopped

2 lb Stew beef frozen 1 pk Dry beef stew mix

Put frozen meat in crock pot. Peel potatoes and carrots and place around meat.
Add onions and green peppers - Sprinkle Everglades Seasoning and Cactus Dust
BBQ Rub over meat & veggies. Add dry stew mix on top of everything
and add a small amount of water, as the frozen meat will generate moisture as
it cooks. Set your crock pot on low, if starting early in the morning, or on
high if starting around noon time...leave on high setting for a couple of hours,
then turn down. By supper time everything is cooked and it is delicious!

Makes 4 -6 servings
½ lb Ground beef ½ ts Oregano
½ cup chopped onion 2 Eggs
1/4 cup water 3/4 cup flour
3/4 ts Cumin 3/4 cup milk
½ ts Everglades Seasoning 1 ts Cornmeal
1 pk Cream cheese, 8 oz
Brown meat, drain. Add onion, cook until tender. Add cream cheese and water,
stir over low heat until cheese is melted. Stir in seasonings. Combine egg, flour,
salt and milk, beat until smooth (I put mine in a blender). Pour flour mixture
into a nine inch greased pie plate, sprinkle with corn meal and then spoon meat
mixture over the top. Bake at 400 degrees, for 35 minutes or until brown. Garnish
with cut tomatoes. For hot and zesty pie, add 4 oz can chopped chili peppers
to meat sauce or try some Everglades Heat to spice it up!
Lemon Barbecue Chuck Steak Printer-friendly

1 Good size chuck steak 1/3 c Lemon juice
1/3 cup Oil 1 ts MSG
1 ts Onion flakes Everglades Seasoning or Cactus Dust to taste
1 ts Grated lemon peel 2 ts Worcestershire
1 ts Dry mustard 1/8 ts Pepper
Mix all ingredients together in bowl to create marinade, and place chuck steak
in. Refrigerate, turn frequently.
Marinate at least two hours. Broil 4 inches from coals. Delicious!

1½ lb Ground beef
1 Can stewed tomatoes ½ cup grated sharp cheese
1 8 oz can tomatoe sauce 4 Strips of bacon or more
½ ts Everglades Seasoning Enough mashed potatoes to
1 ts Onion flakes cover casserole
1 Can veggies (corn or green beans)
Brown and drain hamburger meat. Add tomatoes, sauce, Everglades Seasoning and
onion flakes. Place in casserole dish. Add drained veggies over top. Smother
all with mashed potatoes. Sprinkle sharp cheese and Parmesan cheese on top. Then
place on strips of bacon. I've tried it without the bacon strips and it just
doesn't taste the same! Bake 375 degrees
for about 35 minutes or until bacon is crispy.
Oven Barbecued Chicken Printer-friendly

1 Large whole chicken
3 tb Oil
Cactus Dust BBQ Rub to taste
15 oz Everglades Moppin' Grillin' Sauce
Wash and dry chicken and place in large baking pan. Cover with oil and rub on
Mesquite-flavored Cactus Dust BBQ Rub all over chicken and under. Pour half of
the bottle of Everglades Moppin’ Sauce over chicken and bake uncovered 50-60
minutes at 350 degrees. Baste with remaining sauce every 15 minutes or so. Will
fall off the bone!
Serve with Garlic Mashed Potatoes seasoned with Everglades Seasoning.

1 lb lean ground beef Olive oil
1 onion, diced 1 green pepper, chopped
garlic to taste 1 can stewed tomatoes
11 green olives chopped Everglades Seasoning to taste
Brown pepper and onion in olive oil. Add meat and brown. Add seasonings,
olives and tomatoes. Simmer for about one half hour. Serve over rice or
noodles. A real quick meal.

Rub chicken wings with
Original Everglades Seasoning and Everglades Heat seasonings and then put
into crock pot. Cover with a hot sauce, pads of margarine and vegetable oil.
Let cook for 4-6 hours on low in the crock pot. You can then either bake
on a cookie sheet for 20 minutes to get crispy (skin-on) or just serve with
Everglades Moppin’ BBQ Sauce (skinless).

Cover each side of steak liberally with Everglades Seasoning. Wrap the steak
in cellophane & chill 8-10 hours. Grill to liking. Finish with a generous
glaze of Everglades Gourmet Steak Sauce.

2-5 oz. can boned white chicken meat
1-can cream of chicken
soup 4-cooked potatoes, cubed
1-can white corn drained

½ stick butter or margarine

Sauté onion in butter until tender. Combine first 5 ingredients with
onion and butter; pour into greased casserole dish. Mix Bisquick and milk;

Chicken Cordon Bleu Printer-friendly

4 boneless, skinless breasts of chicken
4 very thin slices smoked ham (or deli
ham)
8 slices of Swiss or mozzarella cheese
Everglades Fish and Fowl

butter
1 cup flour
2 eggs lightly beaten
2 cups bread crumbs
Preheat over
to 375 degrees. Melt butter in glass baking dish. Lightly flatten chicken
breasts between plastic wrap with mallet. Sprinkle both sides with Everglades
Fish and Fowl seasoning. Lay 1 slice of ham and 2 pieces of cheese on flattened
breast, fold in half and seal close with a toothpick. Repeat process for
remaining chicken breasts. Coat each piece with flour, then eggs and then
bread crumbs. Place chicken pieces in glass baking dish. Turn to coat with
butter. Bake for 40-45 minutes or until golden brown.
Grilled Chicken Breast Printer-friendly

1 chicken breast
1 tsp Everglades Seasoning
1 tsp Everglades Cactus Dust

Rub Everglades Seasoning on both sides of chicken breast. Squeeze lemon
over chicken breast. Grill and enjoy!
Wild Orange Pork Loin Printer-friendly

1 medium premium pork loin
1 bottle Everglades Wild Orange
Marinade
3 tsp. Everglades Seasoning
2 tsp. Cactus Dust BBQ Rub
Season pork loin generously
with both Everglades Seasoning and rosemary. Pour Everglades Wild Orange Marinade
over the pork and let the loin marinade in a covered dish overnight. This will
allow the meat to be penetrated and absorb lots of flavor. The next day, plan
on either smoking the loin on a smoker or grilling on the grill. Place loin
directly on a smoker for about one hour and then wrap in tin foil for another
3-4 hours. Pour more marinade in the foil packet if needed. If that extra grill
flavor is what you are looking for, place loin on the grill instead for approx.
40 mins to an hour. The wonderful citrus flavor is amazing!
Spicy Potato Salad Printer-friendly Recipe Card
5-6 cups Cooked Potatoes sliced in small cubes (About 5 Medium potatoes)
4 Hard boiled eggs
1 Cup diced Florida Sweet Onions
1 Cup chopped Bread & Butter
pickles (plus 1 tbsp pickle juice)
1 Tbsp. Everglades All-Purpose Seasoning
½ Cup Everglades Gourmet Remoulade Sauce
¾ Cup Miracle Whip Salad Dressing
(or Mayo)
Toss together potatoes, 3 diced boiled eggs, sweet onion and Bread & Butter
pickles. Season with the Everglades Seasoning. Combine, until creamy, Everglades
Remoulade Sauce, Salad Dressing and pickle juice. Add the creamy mixture to
the potato mixture and stir until all is well coated. Cover the top with the
sliced remaining egg and refrigerate before serving.

1 ¾ Cups drained Sauerkraut
1 lb. sliced or canned corned beef
2 cups shredded
swiss cheese
3 tbsp. Everglades Remoulade Sauce
1 tbsp. sugar 2 tbsp. melted
butter
Topping: 1 small can French Fried Onions OR 1 cup crumbled cracker crumbs
w/ 1/3 cup melted butter
Combine melted butter, sugar & Remoulade sauce together in a bowl. Layer
in greased 8x8 baking dish: Sauerkraut Corned Beef Swiss Cheese Remoulade mixture
Cover with topping of your choice Bake uncovered at 350 for 30 minutes.
