Bobbi's Hamburger Upside Down Casserole
Makes 4 servings
2 ½ cup Elbow macaroni 3 tb Butter
½ c Minced onion 1 lb Hamburger
1 8 oz can tomato sauce Everglades Seasoning to taste
1 8 oz grated cheese 1/4 ts Oregano
¾ cup Milk 3 eggs, beaten
Cook macaroni in salted water until just tender. Drain. In hot butter, saute onion. Add beef, cook until brown. Drain. Stir in tomato sauce, salt, pepper, oregano. Simmer a few minutes, then spread over bottom of greased two quart casserole. Toss macaroni with grated cheese, and arrange on top of hamburger. Press down. Combine eggs and milk, and pour
over top. Cook 350 degrees, 1½ hours or until macaroni is golden and custard is set. Remove from oven, let stand a few minutes. If you have used a bowl type casserole dish, you can invert the casserole onto a serving dish. This is an easy dish to make. Sometimes I also put in a can of corn or green beans to make a complete meal.
