Taters a la Meg
Makes 4 servings
4 Medium potatoes Everglades Heat
2 tb Olive or canola oil
Take 4 medium potatoes and wash well. DON'T peel! Cut into about 1 inch
pieces. Put about 2 tb of olive oil or canola oil (low saturated fat corn oil will do) into a bowl. Put the 'taters in the bowl and
toss until coated with the oil. Sprinkle liberally (this is Kennedy country!) with the Everglades Heat and toss again. Then spread them out on a cookie sheet and bake at 450 for about 15 - 20 minutes, stirring occasionally so they brown evenly and don't stick to the pan. They're yummy! This'll serve 4 people (or in my house, 3!).
