2lbs short ribs with bones
2lbs short rib meat without the meat
Olive oil
6 dried guajillo chiles
4 dried ancho chiles
4 roma tomatoes quartered
2 medium onions
3 cloves of garlic
2-3 limes
2-3 cups beef broth
Corn tortillas
Diced onion
Chopped cilantro
Oaxaca (Mexican melting cheese) or Monterey Jack Cheese
In a medium pot add chiles, tomatoes, 1 onion quartered, garlic cloves, and one lime that has been cut into quarters. Add enough water to cover all the ingredients. Start cooking on medum-high heat and bring to a boil.
When boil is reached reduce to low medium and simmer uncovered for 15-20 minutes till onions are soft.
Remove from the heat and allow to cool for a couple minutes.
While liquid is boiling – in a large pot on medium-high heat sear all sides of the meat.
Remove from the pot and set aside. After removing the meat on medium low add 1 onion that has been diced. Sauté till soft.
Remove the limes from the vegetable pot and throw away.
VERY CAREFULLY add the solids to the blender and some of liquid and a cup of beef broth.
Whirl until well blended. You might have to do this in batches and add more of the beef broth and liquid from the vegetables if needed.
If your blender does not do a good job breaking down the skins of the peppers we would recommend straining the mix before placing it in with the beef.
In the large pot place the beef back in and cover with the blended mixture. If there is not enough liquid to cover the beef continue to add beef broth and the vegetable broth till covered.
Cover and bring to a simmer. Simmer till meat is tender and shreds easily about 3 hours.
Heat a large skillet over medium heat. Using tongs dip a tortilla into the top of the stew liquid and place on skillet.
Shredded cheese, diced onion, minced cilantro and beef.
Fold the tortilla over and fry on each side till it is crispy. About 1-2 minutes on each side.
Serve with a side of more of the liquid stew, limes wedges and diced tomatoes.
