Directions
Preheat grill or oven to 300 degrees.
Prepare baking sheets by covering them with aluminum foil.
On top of the aluminum foil place cooling rack. Spray BOTH sides of cooking rack VERY well.
Place bacon strips in a single layer on the cooling racks.
Sprinkle with Everglades Rub and then brown sugar.
Place pans on grill or in oven and cook for about 45 minutes.
Every 10-15 minutes check the bacon, you might need to rotate the pan, especially if you are cooking on the grill.
Once bacon is cooked remove from grill and let rest for a few minutes before serving it up.
Recipe Note
For the BLT we made a garlic aioli to spread on one slice of toast and guacamole for the other slice.
We added the traditional lettuce and tomato to the sandwich as well.
Garlic aioli
½ mayo
6 garlic cloves minced
1 tsp parsley
1 tsp Everglades heat
Mix them all together and let rest for about 2 hours before serving. (this stuff is AMAZING with burgers also)
Guacamole
4 avocados
2 limes – juice
½ red onion minced
Small tomato minced
Everglades Heat
Add all ingredients together and serve it up.
